Peanut Butter Oat Balls

Those of you who have been with Grace from the start back in 2014 might remember this tea cart staple!

Peanut Butter Oat Balls (makes approximately 2 dozen)

It’s hard to believe that 4 humble ingredients combined together can make such a delicious, nutritious snack.  Think cookie dough but with lots of calcium, fiber, antioxidants and protein! This is a no bake, no fuss, no muss recipe that you can double or triple and then store in your freezer until you’re ready to enjoy (but be warned even a triple recipe doesn’t last long because you will always be ready to enjoy these yummy bites!).

Ingredients

  • 1 cup old fashioned oats

  • 1 cup non-fat dry milk

  • ½ cup natural peanut butter (chunky or smooth), or any other natural nut butter

  • ½ cup honey (label should read “100% Pure” or “Raw”)*

  • Optional:  ¼ cup of your favorite mix-ins such as mini chocolate chips, sunflower seeds, coconut, white chocolate chips, raisins, black currants, etc.

*Note: Raw honey is basically as it exists in the beehive.  The only process it goes thru before bottling is the straining out impurities like beeswax and bees over a fine mesh or nylon cloth.  100% Pure honey is pasteurized to remove the live yeast and extend the shelf life.  There are no added ingredients such as cane sugar and corn syrup. Anything else label just “honey” or “honey blend” may have additives. To avoid all confusion, buy raw honey from our local Koiner Farm!

Instructions:

  • Prepare 2 baking sheets lined with wax or parchment.

  • In a large bowl (or a stand mixer with paddle attachment) mix together the oats and non-fat dry milk until well combined.  A dash of cinnamon can be added here as well.

  • Add the peanut butter, honey and your desired mix-ins. Mix until well combined and a dough-like ball forms.

  • Dampen your hands and pull off about a 1-2 inch pieces of dough. Form into a balls with your hands and place on the prepared baking sheet.

  • Place baking sheets in the freezer for 20 minutes to set.

  • Store in air tight containers in your refrigerator. If you double or triple the batch, store extra batches the freezer.
